What is Za’atar Chicken?
Za’atar chicken is inspired by the flavors of the Levant, where za’atar is a beloved herb and spice blend used in everything from flatbreads and dips to meat and vegetables.
There isn’t one single traditional recipe for “za’atar chicken.” Rather, this version takes the familiar combination of za’atar, lemon, garlic, olive oil, and yogurt and turns it into an easy weeknight baked chicken dish.
Za’atar blends vary by region and by household, but commonly include dried thyme or other herbs, sumac, sesame seeds, and salt. The sumac gives za’atar its characteristic tangy, lemony flavor.

Chicken thighs can be substituted by boneless thighs. Just check them earlier, as they will cook faster than bone-in thighs.
Fresh cilantro can work if you enjoy its flavor.
If you don’t have fresh garlic, use garlic powder.

Za'atar Chicken
This easy Za'atar Chicken is marinated in yogurt, lemon, garlic and za'atar, then baked with roasted garlic and lemon slices until juicy and golden.
Ingredients
- 8 chicken thighs, bone-in
- 1/2 cup plain yogurt
- 1/4 cup lemon juice
- 3 tablespoons za'atar, divided
- 4 garlic cloves, minced
- 1 tablespoon finely chopped parsley
- 1 teaspoon salt
- 1 tablespoon olive oil
- 2 heads garlic, halved
- 1 lemon, sliced
- chopped parsley, for garnish
Instructions
- Combine yogurt, lemon juice, 1 tablespoon za'atar, minced garlic, parsley and salt. Add chicken and coat well. Marinate for at least 30 minutes or several hours.
- Preheat oven to 375°F (190°C).
- Drizzle olive oil into a baking dish. Arrange chicken skin side up.
- Cut garlic heads in half and place the halves between the chicken pieces. Add lemon slices around the chicken.
- Sprinkle the remaining 2 tablespoons of za'atar over the chicken.
- Cover and bake for 30 minutes.
- Remove the lid and bake for another 15 minutes.
- Broil for about 5 minutes, until the chicken is golden brown.
- Let the chicken rest for about 5-10 minutes before serving.
- Sprinkle chopped parsley before serving.
Notes
- Don't discard those roasted garlic halves! The softened garlic can be squeezed out of the skins and spread over warm pita or mixed into the pan juices.
- If you're making this on a busy night, marinate the chicken the night before. When dinner time comes, remove chicken from the fridge 30 minutes before arranging everything in the baking dish and baking.
