How the world ended up on my table
I’m Doris, but many call me La Flaca — Honduran, a wife, and a mom to three boys. My family carries Palestinian roots, but my real love affair with food didn't start at home. It started the day we left it.
When my boys were still small, we moved to Mozambique, where we'd spend the next ten years. Back in Honduras twenty years ago, global flavors were hard to come by. Mozambique was the opposite — only a handful of restaurants, but each one from a different corner of the world. I fell for all of them.
Then one invitation changed everything: an authentic Indian cooking class. The spices, the combinations, the patient little methods — something woke up in me. I took a Thai class next, and I never really stopped. Over those ten years I cooked and tasted my way through Indian, Ethiopian, South African, Vietnamese, Chinese, Japanese, Italian, Mozambican, and Indonesian kitchens, and more.
Then we moved to Tunisia for five years, and a whole new table opened up — Tunisian, Moroccan, Turkish, Syrian, Lebanese, French, and Spanish. Flavors that, with my heritage, suddenly felt close enough to taste.
Learning all these dishes became my quiet obsession. I'd cook a recipe, learn its flavor profile, find the formula hiding underneath, and then simplify — until I could bring that flavor to my own table on an ordinary weeknight. I loved it so much that I started a little pop-up lunch club in Mozambique — a weekly table with a different themed menu each time, just to watch friends taste these dishes for the first time.
Now I'm back home in Honduras. My boys are grown and out of the house, and I find myself reminiscing through my cooking — and wanting to share all of it with you.
So here's my promise: I'll save you the trial and error. The endless scrolling for the "perfect" recipe. The hours spent figuring out what works and what doesn't. I've already done that part. What's left is the good part — bringing the world's flavors to your own table, simply.
