This easy Mediterranean-inspired lemon rosemary chicken and potatoes is a simple one-pan dinner with garlic, tomatoes, olives and fresh herbs.

  • 6-8 bone-in, skin-on chicken thighs and/or drumsticks — about 2½–3 lb
  • 1½ lb potatoes, cut into 1½-inch chunks or slices
  • 1 cup cherry tomatoes
  • 1/3 cup Kalamata olives, pitted
  • 1/3 cup green olives, pitted
  • 6 garlic cloves, lightly smashed
  • 2 tablespoons olive oil
  • 1½ teaspoons salt, divided
  • ½ teaspoon black pepper
  • 2-3 sprigs rosemary, cut in half
  • 1 lemon, cut into slices
  • 1/2 cup water
  • zest and juice of one lemon

  1. Preheat oven to 425°F / 220°C.
  2. Line a large rimmed baking sheet with parchment if you want easier cleanup.
  3. Add the potatoes to the baking sheet.
  4. Toss with: 1 tablespoon olive oil, ½ teaspoon salt, Black pepper. Spread them out in a single layer.
  5. If the chunks or slices of the potatoes are too thick, I recommend you start roasting the potatoes before adding the chicken. Roast for 15 minutes. This little extra step gives the potatoes a head start so they're beautifully browned by the time the chicken is cooked.
  6. Remove the pan from the oven. Arrange the chicken over the potatoes in a single layer, skin side up.
  7. Add the smashed garlic, cherry tomatoes and olives around the chicken. Wedge the rosemary sprigs between the chicken pieces.
  8. Add salt and pepper over the chicken. Drizzle with olive oil.
  9. Add the water down the sides of the baking pan without washing out the chicken.
  10. Return to the oven.
  11. Roast for another 40-45 minutes, depending on the size of your chicken pieces.
  12. The chicken should be deeply golden and reach at least 165°F/74°C at the thickest part.
  13. If the chicken is cooked but you'd like more color on the skin, place the pan under the broiler for 1–2 minutes, watching it carefully.
  14. Remove from the oven and let the chicken rest for about 5 minutes.
  15. Squeeze fresh lemon juice generously over the chicken and potatoes.
  16. Add a little lemon zest if you want an extra burst of citrus.
  17. Serve directly from the pan.
