Ingredients
  • 2 cups basmati rice, rinsed
  • 1 pound chicken thighs, diced
  • 1 onion, sliced
  • 3 garlic cloves, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon turmeric
  • 1 tablespoon garram masala
  • 2 cups chicken broth
  • 1 cup frozen peas
  • 1 tablespoon oil
  • salt and pepper to taste

Instructions
  1. In a medium saucepan boil 4 cups of water.
  2. Add rice, lower heat to low. Cook, covered, over low heat for 15 minutes.
  3. Remove pan from heat and set aside.
  4. Brown chicken in oil over medium-high heat.
  5. Add onion and cook until softened.
  6. Add garlic, ginger, and spices.
  7. Add broth, salt, and pepper. Bring to a boil.
  8. Cover and simmer on low for 20 minutes.
  9. Add peas during the final 5 minutes.
  10. In a serving dish, layer one half of the rice, then the chicken stew (leave a bit of the sauce for drizzle), then the other half of the rice.
  11. Drizzle the remaining sauce over the last layer of rice.
  12. Serve warm.
