Ingredients

Ingredients
  • 2 medium sweet potatoes, peeled and cubed
  • 1–1¼ cups all-purpose flour, plus extra for rolling
  • ½ teaspoon salt
  • 2 teaspoons olive oil
  • ⅓ cup chopped fresh cilantro

Instructions

Instructions
  1. Boil sweet potatoes until fork-tender. Drain well and mash until smooth.
  2. Mix in 1 cup flour, salt, and cilantro. Add more flour as needed to make a manageable dough.
  3. Knead gently on a floured surface until the dough comes together.
  4. Divide into 6 balls. Roll each into a rough circle, dusting with flour as needed.
  5. Cook on a dry griddle over medium heat for 1–2 minutes per side, until cooked through.
  6. Stack and cover with a clean kitchen towel to keep warm.

Notes

  • Drain the sweet potatoes well before mashing. The drier the mash, the less extra flour you'll need, helping keep your flatbreads soft rather than dense.
  • The  flour amount will depend on the size and moisture of your sweet potatoes. Start with 1 cup and add more gradually. Too much flour can make these flatbreads heavy, so a slightly soft dough is what we're aiming for.
