Thai Inspired Roasted Butternut Squash Soup

Sweet roasted squash, creamy coconut milk, and a punchy chili garlic oil with crunchy peanuts.

Sometimes, all a humble squash needs is a little roasting, coconut milk, and a bold finishing touch.

This is comfort food with a little attitude. Roasting the squash, onion, garlic, and ginger brings out their natural sweetness and adds a lovely depth of flavor. Coconut milk makes the soup silky, fish sauce adds savory umami, and a sizzling garlic-chili oil with peanuts gives every bowl a spicy, crunchy finish.

It's cozy enough for soup season, but the Thai-inspired flavors make it feel a little different from your usual squash soup.

Why you’ll love this recipe.

  • Roasting does the flavor-building: Caramelized edges add depth without a long list of ingredients.

  • Creamy without cream: Coconut milk gives the soup a smooth, rich texture.

  • Sweet, savory, spicy, and tangy: The squash, fish sauce, chili, and garlic each bring something different.

  • A topping that makes the dish: The garlic-chili oil and peanuts add crunch, heat, and fragrance.

  • Easy to adapt: Make it milder, spicier, thicker, or thinner to suit your taste.

A little about Thai inspired flavors

Thai cuisine is known for balancing contrasting flavors, including salty, sweet, sour, spicy, and savory. Coconut milk, chilies, aromatics, and fish sauce appear in many Thai dishes, although their combinations and proportions vary by region and recipe.

This soup is Thai-inspired rather than a traditional Thai soup. It brings together roasted butternut squash and a creamy coconut base with fish sauce, chili, garlic, and peanuts for a simple home-cooked version of those appealing flavor contrasts.

Ingredient spotlight.

  • Butternut squash: Naturally sweet and velvety when roasted and blended. Charring the edges adds a deeper, almost caramelized flavor.

  • Garlic and ginger: Garlic adds savory depth, while ginger brings warmth and a fresh, slightly peppery note.

  • Sesame oil: A little goes a long way, adding a nutty aroma to both the roasted vegetables and the finishing oil. Toasted sesame oil can be especially strong, so use it according to your preference.

  • Coconut milk: Gives the soup its creamy texture and gently softens the heat of the chili.

  • Fish sauce: Adds concentrated savory umami. You don't need much to make the flavors taste fuller.

  • Fresh chili and peanuts: The chili brings heat, while the peanuts add crunch and a nutty contrast to the smooth soup.

  • Fresh cilantro: A bright, herbal finish that lifts the richness of the coconut milk.

Easy ingredient swaps.

  • Butternut squash: Use pumpkin or another sweet winter squash.

  • Fresh ginger: Ground ginger can work in a pinch, but fresh ginger gives a brighter flavor.

  • Fish sauce: Use soy sauce for a vegetarian alternative, adjusting to taste. The result won't have quite the same savory depth.

  • Coconut milk: Full-fat coconut milk gives the creamiest result; light coconut milk makes a thinner, less rich soup.

  • Peanuts: Try cashews or pumpkin seeds for crunch. If you have a peanut allergy, omit them and use a suitable alternative.

  • Chili: Use less for a gentler soup or add extra for more heat.

  • Cilantro: Fresh Thai basil or sliced green onion can provide a different but delicious finishing touch.

Beginner tips for success.

  • Cut the squash into similar-sized cubes so the pieces roast evenly.

  • Give the vegetables room on the tray. If they're crowded, they'll steam instead of developing those delicious browned edges. Use two trays if necessary.

  • Check the garlic while roasting. Separate cloves can cook faster than the squash. If they begin to brown too much, remove them early.

  • Blend until completely smooth. An immersion blender is convenient, but blend carefully to avoid splashing hot soup.

  • Add the coconut milk after blending. This keeps the soup easy to adjust for thickness and richness.

  • Watch the finishing oil closely. Golden garlic is the goal, not dark brown garlic.

  • Adjust the consistency at the end. Add warm water a little at a time until the soup is as thick or thin as you like.

What to serve with Thai inspired squash soup

  • Warm flatbread or naan: Perfect for scooping up the creamy soup.

  • Crispy tofu or grilled chicken: Add protein if you're serving the soup as a main course.

  • A fresh cucumber salad: Cool, crisp vegetables provide a refreshing contrast.

  • Steamed rice: A small serving works well if you want a heartier meal.

Make it a complete meal.

Serve a generous bowl topped with the garlic-chili oil, crunchy peanuts, and fresh cilantro. Add crispy tofu or grilled chicken on the side for a more substantial meal, or pair it with warm bread and a fresh cucumber salad for a simple, satisfying dinner.

Thai-inspired roasted butternut squash soup with coconut milk, ginger, fish sauce, and a crunchy garlic-chili peanut oil topping. Easy, creamy, and full of flavor.

Ingredients

For the soup
  • 1 large butternut squash, peeled and cubed
  • 1 onion, cut into thick slices
  • 1 head garlic, cloves separated
  • 2 inches fresh ginger, peeled and sliced
  • 2 tsp sesame oil
  • ¼ tsp salt
  • 1 cup water, plus more as needed
  • 1 tsp fish sauce
  • 1 can coconut milk (about 13.5–14 oz)
For the garlic-chili peanut oil
  • 2 tsp sesame oil
  • 3 garlic cloves, peeled and sliced
  • 1 chili, sliced
  • ¼ cup chopped peanuts
For serving
  • Fresh cilantro, chopped

Instructions

Instructions
  1. Roast the vegetables. Preheat the oven to 385°F (196°C). Toss the squash, onion, separated garlic cloves, ginger, 2 teaspoons sesame oil, and salt together. Spread on a baking sheet and roast for 45–60 minutes, until the squash is tender and the vegetables have browned, with some charred edges. Check the garlic periodically and remove any cloves that brown too quickly.
  2. Make the garlic-chili peanut oil. While the vegetables roast, heat 2 teaspoons sesame oil in a small pan over medium-low heat. Add the sliced garlic, chili, and chopped peanuts. Cook gently until the garlic is golden and fragrant, stirring frequently. Remove from the heat immediately and set aside.
  3. Blend the soup. Transfer the roasted vegetables to a soup pot. Add 1 cup water and blend with an immersion blender until smooth.
  4. Add the coconut milk. Stir in the fish sauce and coconut milk until combined.
  5. Simmer gently. Bring the soup to a slow simmer and cook for about 4 minutes, stirring occasionally. Add more water if you prefer a thinner consistency. Taste and adjust the seasoning if needed.
  6. Serve. Ladle the soup into bowls. Drizzle with the garlic-chili peanut oil, making sure each serving gets some of the garlic and peanuts. Finish with fresh cilantro and serve warm.

Notes

  • For the best flavor, let the vegetables develop real color in the oven rather than removing them as soon as they're soft.
  • Chili heat varies considerably, so start with a small chili or use less if you're sensitive to spice.
  • Fish sauce and coconut milk brands vary. Taste before adding extra salt.
  • If using toasted sesame oil, keep the heat low when making the topping because it can become overpowering when overheated.
  • For a vegetarian version, replace the fish sauce with soy sauce and check that your other ingredients meet your dietary needs.
