These Easy Lebanese Lemon Garlic Potatoes (Batat Harra) are crispy on the outside, fluffy on the inside, and tossed in a bright garlic, lemon, and herb dressing. A simple Middle Eastern side dish that's ready in about 40 minutes.
- 2 pounds Yukon Gold potatoes, cut into 1 inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- Juice of 1 large lemon
- 1/4 cup chopped fresh parsley
- 1/2 teaspoon crushed red pepper flakes
- Preheat oven to 425°F.
- Line a large baking sheet with parchment paper for easy cleanup.
- Place the cubed potatoes in a large bowl. Add the olive oil, salt, and black pepper, then toss until evenly coated.
- Transfer the potatoes to the baking sheet and spread into a single layer.
