  • 8 chicken drumsticks and thighs, bone-in, skin on
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 5 garlic cloves, minced
  • 1 tablespoon fresh ginger, minced
  • 1 can (14 oz/ 400 g) crushed tomatoes
  • 1 tablespoon tomato paste
  • 2 teaspoons paprika
  • 2 teaspoons ground cumin
  • 1 teaspoon turmeric
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons white vinegar
  • 1/2 cup chicken broth
  • 1-2 chilies, sliced (optional)

  1. Preheat oven to 375°F
  2. Arrange the sliced onion in the bottom of a large baking dish. Place the chicken pieces on top, skin side up.
  3. In a bowl combine: garlic, ginger, crushed tomatoes, tomato paste, paprika, cumin, turmeric, cayenne pepper, salt, pepper, vinegar, chicken broth, oil, and fresh chilies (if using). Whisk until smooth.
  4. Pour the sauce all around and over the chicken.
  5. Cover tightly with foil. Bake for 40 minutes.
  6. Remove the foil. Spoon some sauce over the chicken.
  7. Bake another 15-20 minutes until the chicken is browned. If you'd like more color, broil for the last 2-3 minutes.
  8. Remove from the oven and let the chicken rest for 10 minutes.
  9. Sprinkle with cilantro and serve with plenty sauce.
