- 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
- 1 tablespoon cornstarch
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons brown sugar
- 1 teaspoon sesame oil
- 2 teaspoons cornstarch
- 1/4 cup water
- 2 medium bell peppers, chopped
- 3 garlic cloves, minced
- 1 teaspoon grated ginger1/2 cup roasted peanuts or cashews
- 2 green onions, sliced
- Optional: 1/2 teaspoon crushed red pepper flakes
- In a medium bowl, toss chicken with soy sauce and cornstarch.
- Set aside while preparing the rest of the ingredients.
