What is Baklava Cornflakes Bites?
Baklava is one of the most iconic desserts of the Eastern Mediterranean and Middle East. Layers of delicate filo pastry are traditionally filled with chopped nuts and soaked in fragrant syrup scented with citrus or rose water.
This recipe isn’t traditional baklava, but rather a fun modern dessert inspired by its signature flavors. Toasted pistachios, pine nuts, sesame, and rich buttery sweetness recreate the familiar taste in a quick, no fuss treat that’s perfect for busy home cooks. It’s a wonderful example of how classic flavors can be adapted into simple, approachable recipes while still celebrating the spirit of the original.
These bites are crunchy on the outside, slightly chewy in the center, and packed with buttery toasted nuts. Every bite has hints of sesame, pistachio, and caramel, giving them the familiar flavor profile of baklava without the fuss of filo pastry. They are sweet, satisfying, and wonderfully addictive.
Ingredient spotlight.
Pistachios are one of the signature nuts used in many baklava recipes. They bring a naturally buttery flavor and beautiful green color to the finished bites.
Pine nuts small but rich, toast beautifully and add a delicate sweetness that complements the pistachios.
Sweetened condensed milk as it gently cooks, thickens and develops a light caramel flavor that binds the mixture together.
Cornflakes create the crisp texture that replaces the flaky pastry found in traditional baklava.
Sesame seeds lightly toasted, add another layer of nutty flavor while enhancing the Middle Eastern character of the dessert.
Easy ingredient swaps.
Mix and match nuts such as: pistachios, walnuts, almonds, pecans, hazelnuts
For extra flavor try adding cinnamon, orange zest, lemon zest, vanilla extract, or a splash of rose water.
Beginner tips for success.
The condensed milk continues to thicken as it cools. If you shape the bites immediately, the mixture is too hot and soft to hold together. If you wait too long, the caramel firms up and becomes difficult to shape. Allowing it to cool for just a few minutes creates the perfect texture for rolling smooth, compact bites.

Ingredients
- 1/4 cup butter
- 1/2 cup chopped pistachio
- 1/2 cup pine nuts
- 2 Tbsps sesame seeds
- 3/4 cup sweet condensed milk
- 5 cups unsweetened cornflakes
- 1/3 cup ground pistachio
Instructions
- In a large skillet or saucepan, melt the butter over medium heat.
- Add the chopped pistachios, pine nuts and sesame seeds. Cook for 3-5 minutes, stirring frequently, until the nuts are lightly golden and fragrant.
- Pour in the sweetened condensed milk. Cook for 2-3 minutes, stirring constantly, until it thickens slightly and turns a light caramel color.
- Add the cornflakes. Using a large spoon or spatula, gently fold the mixture until the cornflakes are evenly coated. Remove from the heat.
- Allow the mixture to cool for about 5 minutes, just until it's comfortable to handle but still war.
- Lightly butter your hands and roll the mixture into golf ball sized bites. Arrange them on parchment paper or a silicone mat.
- Sprinkle each bite with the ground pistachios. Allow them to cool completely before serving.
Notes
- Stir gently when adding the cornflakes to keep them crunchy.
- Lightly buttering your hands makes rolling the bites much easier.
- Work while the mixture is still warm, as it becomes firmer as it cools.
- Don't over toast the nuts - they should be golden, not dark brown.
- For an even more baklava inspired finish, drizzle the cooled bites with a little honey just before serving.
