These Easy Middle Eastern Kofta Skewers are made with seasoned ground beef, garlic, onion, and warm spices, then grilled or baked until juicy and flavorful. A beginner friendly recipe perfect for weeknight dinners or backyard barbecues.

Ingredients
  • 1 1/2 pounds ground beef
  • 1 small onion, very finely diced or grated
  • 3 garlic cloves, minced
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil (for brushing)

Instructions
  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. Preheat your grill to medium high heat, or your oven to 425°F (220°C)
  3. In a large bowl, combine the ground beef, onion, garlic, parsley, cumin, paprika, cinnamon, salt, and pepper. Mix gently with your hands until just combined. Avoid over-mixing, which can make the kofta dense.
  4. Divide the mixture into 8 equal portions. Shape each portion around a skewer, pressing gently to form a long sausage shape about 1 inch thick. Place the skewers on a tray and refrigerate for 20 minutes if time allows.
  5. Lightly brush the kofta with olive oil.
  6. To Grill: Cook for 10-12 minutes turning every few minutes, until browned and cooked through.
  7. To Bake: Arrange the skewers on a parchment-lined baking sheet and bake for 12-15 minutes, turning halfway through. For extra color, broil for the last 2-3 minutes.
  8. Let the kofta rest for 5 minutes before serving. Serve with your favorite sides and sauces.

  • Don't over-mix the meat or the kofta can become tough.
